Lavender & Black Currant Sauces for Pork and Beef


This savory Lavender &  Black currant sauce  makes a wonderful complement to meat The sauce can be made several hours ahead of time. Re-warm it over low heat before serving, which is great when trying to plan and host a dinner party. The more you can pre make makes it easier to entertain your guests.

 

Savory Lavender  Black Currant Sauce

YIELD: 1 cup

INGREDIENTS

 

  • 2 tablespoons butter 
  • 3 large minced green onions
  • 3 garlic cloves, minced
  • 1 Tbsp Purple Haven Ground Lavender To make ground lavender, often called powder, we recommend a coffee grinder. 
  • 1 teaspoon of Purple Haven savory spice
  • 14 cup brandy or a merlot
  • 12 cup Purple Haven black currant jam
  • 14 cup Dijon mustard
  • 14 cup dry white wine
  • salt & freshly ground black pepper, to taste Use Purple Haven  Salt and Pepper Blend

DIRECTIONS

  • Melt the butter in a medium size heavy saucepan over medium heat.
  • Add the onion and garlic, savory spice and ground lavender  saute until transparent, about 3 to 5 minutes.
  • Stir in the brandy, jelly, mustard and wine.
  • Simmer over low heat for 10 minutes.
  • Season with salt and pepper. blend
  • Serve warm.

Lavender Black Currant  Simple & Quick Sauce

INGREDIENTS

  • ½ Tbsp Purple Haven Ground Lavender   To make ground lavender, often called powder, we recommend a coffee grinder. 
  • 3 teaspoons of red wine vinegar
  • 1 large jar Purple Haven black currant jam
  • 3 Teaspoons Dijon mustard
  • salt & freshly ground black pepper, to taste Use Purple Haven  Salt and Pepper Blend

DIRECTIONS

  • Melt jam in medium size heavy saucepan over medium heat.
  • Wisk in the mustard, vinegar, ground lavender
  • Simmer over low heat for 10 minutes.
  • Serve warm.
