Lavender Roasted Beets with Garlic & Lemon

A bright, earthy side dish where sweet roasted beets meet the floral lift of lavender, mellow roasted garlic, and a burst of fresh lemon. Beautifully aromatic, vibrant in colour, and perfect for both casual meals and elegant gatherings.
Ingredients
- 1 pound medium beets, with 1 inch of stems remaining
- 6 unpeeled garlic cloves
- ¼ cup + 1 teaspoon dried culinary lavender, finely ground in a spice grinder
- Finely grated zest of 1 lemon
- Juice of 1 lemon
- Salt and freshly ground pepper, to taste
- ¼ cup chopped parsley leaves
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
2. Prepare the Beets
Place the beets and unpeeled garlic cloves on a large sheet of foil.
Sprinkle with ¼ cup of the ground lavender, drizzle with a little oil if desired, and toss to coat evenly.
Fold the foil into a tightly sealed packet and place it on a baking sheet.
3. Roast
Roast for 45 minutes, or until the beets are tender when pierced.
Set aside to cool until they can be handled comfortably.
4. Peel & Chop
Once cooled, remove the skins from the beets.
Cut the beets into quarters and transfer them to a large pan.
5. Add Flavour
Squeeze the roasted garlic cloves over the beets, releasing the soft, caramelized garlic.
Add:
- Lemon zest
- Lemon juice
- The remaining 1 teaspoon lavender
Season with salt and freshly ground pepper.
6. Warm & Serve
Warm gently over medium heat until heated through.
Sprinkle with chopped parsley just before serving.
Serve hot.
