Lavender Beets with Garlic and Lemon

recipe with Roasted Lavender Beets

1 pound medium beets, with 1 inch of stems remaining

6 unpeeled garlic cloves

1/4 cup plus 1 additional teaspoon dried culinary lavender. (finely grind in a spice grinder)

finely grated lemon zest from 1 lemon

juice squeezed from 1 lemon

salt and fresh ground pepper

1/4 cup of parsley leaves chopped



PRE HEAT THE OVEN TO 375 f 190 c

Place the beets and garlic on a large sheet of foil and sprinkle with 1/4 oil tablespoon of lavender toss to combine then fold up the foil to make a sealed package. Place on a baking sheet and roast for 45 minutes, or until tender. Set aside till the cool enough to handle, then remove the skins. Cut the beets into quarters and place in a large pan. squeeze the garlic over the beets., stir in the lemon zest, lemon juice tablespoon of oil remaining lavender . Season to taste with the salt and pepper Warm through over medium heat. Sprinkle with parsley before serving Serve hot.
