Crostini with Lavender-Roasted Tomatoes

Ingredients

4 plum tomatoes, halved lengthwise

Extra-virgin olive oil, for drizzling

Purple Haven Lavender salt  & pepper

1 to 2 teaspoons  Lavender Pizza Blend

8 1/2-inch-thick slices baguette, cut on the bias

1 garlic bulb

Goats Cheese 

Directions

Preheat the oven to 275 degrees. Place the tomatoes cut-side up in a shallow baking dish. Drizzle with olive oil and sprinkle with salt, pepper and the pizza seasoning blend.  Roast 1 hour 30 minutes to 2 hours, or until the tomatoes are very soft and slightly shrunken.  Add the garlic at this time for roasting.  See preparing Garlic Bulb section.  Check garlic around 1 hour time to make sure it is not burning.  If it is not yet soft and caramelized, continue to roast 

Increase the oven temperature to 400 degrees. Place the baguette slices on a baking sheet, drizzle with olive oil and bake until golden brown, about 10 minutes. Rub the crostini with garlic and top each with a spread of goats cheese and place one   roasted tomato on top.   Add additional salt & pepper and lavender pizza blend. 

Preparing Garlic Bulb for Roasting

To prepare garlic bulb for roasting, start by cutting off the top of the bulb, leaving about 1/4 inch of the top intact. This will help to prevent the garlic from bursting open during the roasting process. Next, drizzle the garlic bulbs with oil, making sure to coat them evenly.  Season the garlic bulb with the lavender salt and pepper, then wrap in foil to prevent it from burning during the roasting process.
